Pre-fermentation extraction for 8h at 10 oC. Below pressure in pneumatic presses, settling and fermentation in stainless steel at controlled temperature in tanks between 13-16 oC lasting for 20 up to 30 days.
Intense aromatic nuances, characterized by flower blossoms, citrus, melon, peach, exotic fruits. Aromatic and taste complexity and balance combined with a pleasant and refreshing acidity.
